Winter Salad

In honor of citrus season, this salad features both oranges in all forms and grapefruit. The sharpness of radicchio and fresh fennel accompany the complex citric flavors and nuttiness of the toasted almonds. To round everything up, drizzle a generous amount of extra virgin olive oil on top of your seasonal salad. Use Cantasole “Peranzana” for a balanced fruitiness or boost the citric aromas with “Coratina”.

INGREDIENTS

1 small shallot
2 oranges
30ml fresh orange juice
orange zest
1 grapefruit
1⁄2 fennel bulb
1 tablespoon apple cider vinegar
a handful of radicchio leaves
a handful (about 25g) of almonds
2 tablespoons Cantasole “Peranzana”
freshly ground black pepper
sea salt

METHOD

  1. Roughly chop almonds and dry-toast in a pan on medium heat for a few minutes. Zest an (organic) orange. Set aside.

  2. Halve fennel bulb and cut or shave into thin segments.

  3. In a small bowl combine orange juice, black pepper, a sprinkle of sea salt and apple cider vinegar.

  4. Slice halved shallots into stripes and marinate them in the orange juice mixture. Set aside.

  5. Cut the top and bottom of the oranges and grapefruit with a paring knife to create a flat surface. Remove peels by slicing downward and cut citrus fruit into thin rounds.

  6. Layer the salad with the oranges and grapefruit as a base. Next, add the marinated shallots, sliced fennel, radicchio leaves and toasted almonds.

  7. Drizzle marinade from step 3 and a generous amount of Cantasole Peranzana over your salad. Finish with orange zest, fennel green, more sea salt and black pepper to your liking. Enjoy!
